Ingredients
For the Filling:
1 pound ribeye steak or flank steak, thinly sliced
1 tablespoon olive oil
1 medium onion, thinly sliced
1 green bell pepper, thinly sliced
1/2 cup mushrooms, thinly sliced (optional)

6 slices provolone cheese, shredded or chopped
12–14 egg roll wrappers

Instructions
Prepare the Steak Filling:
Heat olive oil in a large skillet over medium heat.
Add the sliced steak and cook until browned, about 3–4 minutes. Remove from the skillet and set aside.
In the same skillet, sauté the onions, bell peppers, and mushrooms (if using) until softened.
Add the garlic powder, salt, and pepper, stirring to combine.
Return the steak to the skillet, mix well, and remove from heat. Let the mixture cool slightly.
Assemble the Egg Rolls:
Lay an egg roll wrapper on a flat surface with a corner pointing toward you (diamond shape).
Place about 2–3 tablespoons of the steak mixture in the center of the wrapper.
Add a small handful of shredded provolone cheese on top.
Fold the bottom corner over the filling, tuck in the sides, and roll up tightly. Seal the edge with a bit of water.
Repeat for all wrappers.
Fry the Egg Rolls:
Heat about 2 inches of vegetable oil in a deep skillet or fryer to 350°F (175°C).
Fry the egg rolls in batches until golden brown and crispy, about 2–3 minutes per side.
Remove and drain on a paper towel-lined plate.
